			<content:encoded><![CDATA[<p>It has been at least half a year since I have updated this blog. Unfortunately, after I started Nametz, I was called to Manila to support another program for the company. But, I&#8217;m back and here to stay for 4 months. I have plenty of time to write about the delish food both Bacolodnons and Negrenses have to offer. Ahh&#8230;. it&#8217;s good to be home. My 6 months stint in Makati has been hell in terms of  &#8220;Palette&#8221;. People I&#8217;ve met since I came back just couldn&#8217;t help but comment on how much I have gained weight. Well, who could blame them&#8230; All I eat are fast food and everything fried. Would you believe I have memorized the Menu of all Fast Food listed online? I swore not to eat fast food for the next few months that I will be staying home. So far I&#8217;ve been eating healthy since I came back and hoping to lose weight while at it too. <img src='http://s0.wp.com/wp-includes/images/smilies/icon_smile.gif' alt=':)' class='wp-smiley' />  Well&#8230; watch out for my next blogs!!!!</p>

			<content:encoded><![CDATA[<p><img class="alignleft size-medium wp-image-25" title="inasal" src="http://nametz.files.wordpress.com/2009/10/inasal.jpg?w=225&#038;h=300" alt="inasal" width="225" height="300" />The City of Smiles does not only offer pastries and sweet smiles, Bacolod is also known to be breeders of Fighting Cocks and home to the mouth watering &#8220;chicken inasal&#8221;.</p>
<p>The term &#8220;inasal&#8221; is derived from the process of mounting a piece of poultry on a bamboo stick. The delicious coal grilled chicken is glazed with annatto (achuete) in hot oil, until golden brown. Usually eaten with fried rice topped with garlic and pickled young papaya (achara). Great to be paired with either Coke or Mountain dew. For best taste results, chicken inasal is to be dipped in a mixture of soysauce, calamansi and spicy vinegar (or sinamak as locals call it). Best eaten with your fingers.</p>
<p>If you&#8217;d ask me, my personal fave would be the &#8220;Pecho Pak&#8221; or Pecho nga may pakpak (breast with wings), as it has more meat than the other parts. Others would prefer &#8220;paa&#8221; or thigh and some would also want to have a taste of isol (chicken ass), atay (chicken liver), baticolon (chicken gizzard). Filipinos are so ingenious and resourceful as we do not let anything go to waste.</p>
<p>May I recommend the following restaurants that serves the best Chicken Inasal in town:</p>

Aida&#8217;s Chicken (Manokan Country)<br />
Lion&#8217;s Park (Manokan Country)<br />
Chicken Deli</p>
<p>I can&#8217;t be the judge as to how it tastes, but the best thing for you to do is come over and taste Chicken Inasal for yourself.</p>

<p>Bob&#8217;s Restaurant, located in BS Aquino Dr, fronting Riverside Medical Center currently known as the Dr. Pablo O Torre Memorial Hospital. Bob&#8217;s was established in the 1960&#8242;s, and is now one of Bacolod&#8217;s prime establishments. From childhoond I can still remember how the restaurant developed over the years, from the looks of a Diner to a classy restaurant. </p>
<p>Bob&#8217;s offer a wide array of food to choose from. One of their famous dish is &#8220;Sate Babe&#8221;. Grilled pork BBQ smothered with a rich blend of peanut sauce it comes usually paired up with java rice (yellow rice as we fondly call it) &amp; atchara (pickled young papaya strips). For such a delicious meal, this only costs somewhere around 90 pesos. </p>
<p>I was fortunate enough to be sent to Melbourne, Victoria in Australia for a Training session, and along King St, was a little restaurant called Satay Styx. They also offered a similar dish, grilled pork BBQ with peanut sauce but then, nothing compares to what we have back home. Well, this is just my opinion, and what better way for you guys reading this to find out, is come over to Bacolod and have a taste of Bob&#8217;s Sate Babe. </p>

			<content:encoded><![CDATA[<p>Hi I&#8217;m Inah Uytiepo, a native of  Bacolod City, also known as the City of Smiles.  Aside from the sweet smiles of the People here, the city is also home to the world renowned &#8220;MassKara Festival&#8221;. Every October, the city celebrates a Month long Festival, which started in 1980. The Festival was created during the Island&#8217;s period of crisis, when the sugar industry suffered it&#8217;s all time low. It was also during this year that the inter-island vessel Don Juan sank, with it a lot of Negrenses, some coming from prominent families.  The city government officials and artists in residence decided to create a festival&#8230; thus, the MassKara Festival was born. The word MassKara comes from two Spanish words.. &#8220;Mass&#8221; which means people and &#8220;Kara&#8221; meaning faces. When both words are put together, it means Faces of the People.  This festival can be compared to the Mardi Gras of Brazil where people come out to dance in the streets. Dancers wear Smiling Masks as they dance on the streets, symbolizing the people, who can still smile despite the many trials that they have been through.</p>
<p>Bacolod is not only knonw for the Festival but also for the food. Tourists flock to Bacolod every year and locals always get the same feedback. &#8221; I love the food!&#8221; Since the province&#8217;s primary crop is sugar, we&#8217;re also known for our local delicacies. Piaya, a flat unevend bread filled with muscuvado sugar.  Napoleones, a layered puffed pastry filled with custard and topped with confecionaire sugar glaze. The famous Chicken Inasal is also one of the dishes that Bacolod offers its tourists.</p>
